There is nothing more soothing than a hearty chicken soup. This chicken soup is especially special because it is packed with 6 different kinds of vegetables and has barley which is a high fibre food. Fibre and gut health go hand in hand so for a healthy gut, why not try this soup throughout your week?
Ingredients:
- ½ cup pearl barley
- 1 stalk celery, diced
- ½ leek, diced
- 1 carrot, diced
- ¼ broccoli, diced
- ½ cup white cabbage, diced
- ¼ courgette
- 5 garlic cloves, minced
- ¼ onion, diced
- 1 large chicken breast
- 1 tsp thyme leaves
- 1 tsp chopped parsley
- Pinch of ground black pepper
- Pinch of salt
- 4 cups chicken stock
- 2 tbsp olive oil
Method:
- In a large pot on medium to high heat, add olive oil, garlic and onion. Saute for a couple of minutes
- Then add the celery and carrot and cook for 5 mins
- Then add the rest of your vegetables along with the chicken stock, barley, thyme and parsley
- Let it come to a boil and add the chicken breast and salt & pepper to taste
- Put it on low heat and let it boil for 1 hour, occasionally stirring so the bottom of the pot doesn’t burn
- After an hour, tear the chicken breast up so it’s shredded and incorporated into the soup. Boil for another 10mins and it’s ready to eat!
